Back Up and Running (and a Giveaway)

Look who’s office is back up and running! Ok, well, sort of. The painting part is finished and the new furniture is moved in, but everything else is in shambles. I’m off to NuVal for the afternoon, so I’ll finish the rest tonight.

I know I’m such a dork, but I cannot wait for my new office to be done. It’s something I’ve been meaning to do for about a year now, so I’m glad that I finally got going on it. Sometimes, starting is really the hardest part, so now that I’m just about finished, I’m excited to see the final product. I’m also just really proud of my work!

Breakfast

This morning’s breakfast was scrambled eggs (1 egg + 2 egg whites) with tomatoes, avocado, nutritional yeast, and a sprinkle of truffle salt. It actually started out as an omelet, but I failed miserably when I tried to flip it.

Snack

Mid-morning, my stomach started to grumble, so I snacked on an apple with a spoonful of almond butter (that went right into my mouth) to hold off my hunger until lunchtime.
