I have been so crazy-busy with loving life and going to class that I have not had the time to post! Don't worry, I have not forgotten my followers :)
I have tasted the bread from the last post and have exciting news! It tasted fantastic! The zucchini kept the bread nice and soft, so soft it was almost doughy (with no flour!) I must add, though, that I got impatient and did not bake it long enough. It looked and smelled done after 20 minutes, but after it cooled and set a little, I cut into it and found a bit of goo. The good news, here, is that since there were no eggs, it was still safe to eat. After sitting for a day on the counter, the air sort of dried it up a bit and it was a perfect on-the-go breakfast!! I am so proud of myself for creating this recipe!
Task #2 for this post is after school snacks. When I was a kid, I was never home after school. If it wasn't my volleyball practice I was going to, it was my parents' that they coached. An after school snack was a must because dinner wouldn't be for another 3 + hours (factor 2 hrs for practice plus driving and cooking time). On top of that, I couldn't perform my best at practice on a nearly empty stomach from my lite 11:30 am lunch at school. Luckily, my mom is a genius when it comes to quick and healthy snacking, so I have put together a list for you. Feel free to leave any ideas you might have as well
-yogurt with jam or dried fruit
-peanut butter on celery with raisins
-peanut butter crackers
-trail mix/home made granola
-veggie sticks
-pieces of fruit
-occasionally an oatmeal cookie or slice of sweet bread (banana, zucchini, pumpkin, etc.)
