Baby Arugula & Red Corn Salad w/ Balsamic Key Lime Dressing

I went to a local family-owned grocery store today. I was absolutely enticed by the red ear corn because I have never had it before. I also picked up some baby arugula (because I’m an Italian-American and keeping it in my kitchen is habit! haha) and this very pretty and yummy salad was created:

Baby Arugula & Red Corn Salad


1 bag of baby arugula

2 ears of red corn

1/2 cup of sprouted quinoa

1 green bell pepper


2 tbsp of vegenaise

1 tsp of balsamic vinegar

1 tsp of basil

*Place dressing in salad and toss. Then spritz generously with key lime juice (or lemon or regular lime juice, depending on what you’ve got!) .

Also, arugula is bitter stuff. You might want to use spinach instead if you don’t love arugula like I do. If you do go for spinach or another leaf, you might also want to go a little lighter on the citrus juice because it might overpower a less-flavorful selection!
