Good morning! This morning we visit another healthy food that begins with the letter A: Avocado’s! Avocado’s are a great addition to a healthy diet. They provide heart healthy fats, fiber, antioxidants, and essential nutrients. I have only begun to love avocado’s in the last few years, and now I can’t get enough of them. My kids love avocado’s in bean dips and salads. I love them straight out of the peel.
Today’s food idea is supposed to look like a boat. The Avocado skin was perfect for this.
One whole avocado
1 TBL salsa
1 tsp. light sour cream
1/2 tsp. lemon juice
Sliced avocado length wise. Scooped out flesh. Put all ingredients into a food processor and whipped it up. Returned flesh to scooped out avocado.
