Avocado, Apple, Arugula Salad

Good Morning and Happy Saturday!

Springtime has arrived and to celebrate I made a fabulous spring salad that I absolutely adore.  I am a texture kind of gal and love this salad because it has great crunch factor as well as creaminess from the avocado.

Avocado, Apple, Arugula Salad

2 cups arugula1 small fuji apple, diced3 slices avocado, diced1 tbsp sliced almonds
Mix together and dress with:
1 tbsp balsamic vinegar1 tbsp dijon mustard1 tsp extra virgin olive oilfresh cracked black pepper

I guess this salad could be called the 4 A salad with its use of Avocado, Apples, Arugula and Almonds.
Avocado- Good FatApples- Great CrunchArugula- Peppery GreensAlmonds- Good Fat, Extra Crunch
Ah... Saturday Mornings are so sweet.  I slept in until 7:00 am and then lazily read in bed for another 30 minutes.  I finished my last Christopher Buckley book- Thank You for Smoking.  I have been on a Christopher Buckley tear and have read:  Boomsday,  Supreme Courtship and Thank You for Smoking.  These books are hilarious!
After beginning the day with a little laughter, I had 2 glasses of warm lemon water, and a bowl of Overnight Raspberry Banana Chia Oats!  I think the reason I love these so much are because it takes like a huge bowl of pudding first thing in the morning.

Overnight Raspberry Banana Chia Oats
1/3 cup rolled oats1 banana, sliced10 raspberries1 tbsp Ruth's Chia Goodness1/2 a scoop of protein powder (optional)2/3 cups So Delicious Unsweetened Coconut Milk

Mix the above ingredients in a bowl, pop in the fridge overnight and enjoy in the morning.
I have huge cooking plans this weekend and am super excited.  On deck this weekend, we are going back to our Tex Mex roots and then traveling afar to Ethiopia!  I love, love Ethiopian food and can't wait to experiment in the kitchen.  There has also been a request for the World's Best Chocolate Chip Cookies and am contemplating making those as well.  We shall see....
