as simple as eggs

During the Holiday season my mom works at William Sonoma. I greatly benefit from this because I get to try out all of the gadgets that she brings home. Her most recent buy was  Le Creuset Classic Mini Cocotte .

With these we decided to make an egg dish. We made up the recipe with some ingredients we had in the house.


  • eggs
  • chopped bread
  • pesto
  • parsley


  1. Oil the bottom of the dish to prevent sticking
  2. add bread to the bottom of the dish
  3. add 2 eggs per dish
  4. top with a spoonful of pesto and parsley
  5. bake at 375 for about 10-15 minutes
