Artichoke, Spinach, and Feta Stuffed Shells

Last night before I met friends at a bar known as the “sports bar” of politics to watch the results roll in I made myself a healthy and comforting dinner. The recipe was for Artichoke, Spinach, and Feta Stuffed Shells from CookingLight.com. As soon as I read the reviews for the recipe I knew it was one I needed to try. Not only did reviewers give it four stars but many also likened it to a bowl of spinach artichoke dip. Mmmmmm. Need I say more. This recipe was absolutely fantastic and an example of Cooking Light recipes at their best. It was much more satisfying than its 394 calories. The tomato sauce contained pepperoncini peppers, which I had never used before. They provided a nice zip to the sauce. The mix of fat free cream cheese, garlic, spinach, artichokes, provolone, and feta that filled each shell was luscious and melty. I loved how the vegetables balanced out the richness of the cheese. This was the perfect dinner for an important day and one I would happily make for a dinner party. I cannot wait to have leftovers for lunch. I’m already salivating just thinking about it.
