Apricot Super Balls

All summer little balls have been bouncing around the blog world. I’m sure you know the balls I’m talking about, they look a little something like this…
It doesn’t mean that summer is done just because school has started. I don’t plan on wearing pants until the fall, and it’s not fall until September 23rd. Since apricots are my favorite dried fruit and they remind me of summer I decided to make some…
Apricot Super Balls

Edible Ingredients:

  • 3 tbsp hemp hearts
  • 1 tbsp chia seeds
  • ½ scoop protein powder (I used vanilla)
  • 1 tbsp peanut flour
  • 3 dried apricots
  • 23 almonds
  • 2 tbsp liquid (You can bet I used cold tea: Forever Nuts flavor)

Engineering Directions:

My blender throws a temper tantrum if I don’t blend all the nuts first, so I follow this order:
  1. Add all nuts/seeds into magic bullet and blend (You may need ear plugs for this step)
  2. Add peanut flour and protein powder. Blend
  3. Add apricots. Blend
  4. Add liquid. Blend
  5. Form into balls (made 5), and sprinkle with cinnamon

When I was growing up the only dried fruit I enjoyed was apricots. I didn’t like raisins, craisins, dates, or prunes! In all honesty though I would prefer juicy fresh fruit over dried fruit any day, but if I’m going to eat dried fruit…I like it cold! So you can be sure I store these balls in the fridge!
