Apple Walnut Chia Oats + Green Smoothies + OMG Chocolate Peanut Butter Crispie Treats

FuHello and TGIF!

I hope everyone is having a great day so far.  We are having some work done to our house so the activity level around here is high.  My dog, Gumbo, is just not sure what to do with himself:)  I am excited because we are re-doing the basement bathroom and putting in real tile and flooring, as well as, doing the wainscoting in the hallway. I will have to take some before and after pictures. I love transformations of all forms and can't wait to see how it all turns out!  I think this is going to make a big difference in both areas and am happy that the project is underway.

I am also super happy because I started my day off with the most amazing bowl of Apple Walnut Oats.  I just don't know how something so simple can taste so good but it was positively scrumptious!

Apple Walnut Chia Oats
1/2 cup rolled oats 1/2 cup water 1/2 cup skim milk 1 tbsp chia seeds 1 tsp ground cinnamon 1/2 cup diced apple
Combine the above ingredients in a small pot and cook over medium heat for 4-6 minutes.  Remove from heat and pour oats into a bowl.
Top with:
1/2 cup diced apple 1 tbsp chopped walnuts
This was an extremely hearty bowl of oats with lots of texture from the apples and walnuts.  
So good.
I trained two clients today and then did my own workout.  Today was my weight circuit day and I admit that I was not fully psyched about it but trudged through it, and got it done, and feel so much stronger and better now!  I also took my husband and dog on an hour long walk to enjoy the beautiful sunshine.  
We are supposed to have another beautiful weekend and I am so glad because we have soccer games both days, as well as, a Longboarding Race in Eugene, OR.

Lunch was one of my favorite Banana Spinach Smoothie  +  Ezekiel Bread topped with Sunbutter and Banana
Banana Spinach Smoothie
1 cup Almond Breeze Almond Coconut Milk (I love this stuff) 1/2 banana 1 scoop vanilla whey protein powder 1 tbsp chia seeds 2 cups baby spinach 4 ice cubes
Add the above ingredients into Vitamix or blender and blend until smooth and creamy!
I have had one of these smoothies almost every day this week. They taste so good after I  go running and I get an additional 20 grams of protein per smoothie!
You know I love my nut butter and banana sandwiches and had to have one on the side today.
Now the next recipe is not exactly what I would call "healthy" but they are a "healthier" version of rice crispy treats and they are OMG good!  I got this recipe from my favorite vegan blogger- Angela Liddon at Oh She Glows.  I am so excited because she is writing a cookbook and I can't wait for it come out because her recipes are truly divine.  She also has a sweet tooth like myself and is always a good source from sweet treats.

OMG Chocolate Peanut Butter Crispy Treats recipe adapted from Oh She Glows
Squares: 1/2 cup all natural peanut butter  1/2 cup brown rice syrup 2 tsp pure vanilla extract 1/4 cup unsweetened almond coconut milk 1/2 cup sifted cocoa powder 1/2 tsp sea salt 3 cups crisp rice cereal  1/2 cup chocolate chips
Fudge Frosting 1 cup all-natural peanut butter 1/2 cup chocolate chips 1 tsp coconut oil Kosher salt, to taste
Directions 1. Line an 8 inch square pan with 2 pieces of parchment paper going each way. 2. In a medium sized saucepan, stir together the peanut butter, brown rice syrup, vanilla, and almond milk together over low-medium heat. Once combined, slowly add in the sifted cocoa power and the kosher salt. Stir over low heat being careful not to burn. 3. Mix in the 3 cups of rice crispies and remove from heat. Now add I the 1/2 cup of chocolate chips and stir well. Spread this mixture into the square pan lined with parchment paper. Press down firmly and evenly. Place in the freezer for at least 10 minutes to firm up. 4. Meanwhile, make the Fudge Frosting Peanut by melting the 1/2 cup chocolate chips and coconut oil in a small bowl in the microwave for 30-60 seconds. Be careful not to burn. Now stir in the 1 cup peanut butter and kosher salt to taste. Mix until completely combined. 5. Remove the pan from the freezer when firm to touch and spread on as much of the Fudge Frosting as you like.  6. Place in the freezer for 45-50 minutes until firm. Cut into squares and enjoy! Store in the fridge. These little gems are to be eaten with caution because they are addictively good and should be eaten in moderation! I am off to pick up the kiddos. Happy Friday Everyone!
