My family loves this recipe for Apple Coleslaw. The dressing is 1C. lowfat buttermilk, ½ c reduced fat mayo, 2T rice wine vinegar, 1T Dijon mustard, 2tsp sugar (or sugar substitute) ¼ tsp salt. The slaw is 2 green apples chopped, 1T rice wine vinegar, 1C shredded carrots, ½ c diced green onions and 2 C each chopped green and red cabbage. Mix up the dressing and pour over the slaw ingredients. Toss and chill till time to serve. This recipe is from Richard Simmons Farewell to Fat Cookbook and makes a tasty side for anything grilled.
