Apple Chicken Salad + Kashi Warm Cinnamon Oat Cereal

Good Evening! We opted not to go out to eat tonight. The kids were too tired and I am a bit worried that they are not feeling 100%. A record amount of kids have been absent from school this year and both Emmet and Zoe's classes had 6-7 people out ill this week. I was actually happy to be able to bring them home and load them up on Vitamin C and not to pig out on pizza which we were thinking of having.
On the way out the door I had a couple bites of cottage cheese and a beautiful nectarine. Delicious. I am really trying to incorporate a little protein at snack time each day. Good sources of protein are cottage cheese, nuts and greek yogurt.
So instead of pizza I made a Apple Almond Chicken Salad that was soo good. I basically used the crunchy salad base of broccoli slaw and bell peppers and then added some diced Honeycrisp Apple, warm diced chicken and topped with a touch of Feta Cheese and Almonds. Wow! This was a good one and the chicken was warm so it made it extra delightful.
Apple Almond Chicken Salad
2 cup baby spinach
1/2 Mann's Sunny Shores Broccoli Slaw
1/2 cup sliced orange and yellow bell peppers
1/2 cup diced, Honeycrisp Apple
3 oz of chicken, diced
. 5 oz of feta cheese
1 tablespoon sliced almonds
Dressed with 1 tsp Olive Oil, 1 tbsp Balsamic Vinegar and 1 tbsp Dijon Mustard
Now the kids were not too tired to go to Target and get their Halloween Costumes. I could not believe that the selection was already sort of picked over and it is only October 2nd. We will be spending Halloween with some friends in Durham, NC that also have kids and they are extremely excited about having Halloween in a different city. They think this is going to be so cool! Emmet was going to be Harry Potter (and he actually resembles him slightly) but instant gratification got in the way and he decided he could not wait another day to find his costume elsewhere. So we ended up with a Ninja Costume complete with Ninja Sword and Princess Vampire with Fangs.
Well our trip to Target was extremely successful. I found Kashi Heart to Heart Warm Cinnamon Oat Cereal! I was so excited that I had to buy the last two boxes that they had. I have been on the hunt for this all week and I have to tell you I was not disappointed. I love the cereal. It is basically Heart to Heart with a cinnamon spice dusting on top and it is extremely tasty. We had to pop the box open in the car and give it a try immediately. My first thought was these would be great on my Pumpkin Parfaits and sprinkled over yogurt and ice cream and just by themselves with a little Silk Heart Health Vanilla Soymilk. Yum! Kashi has done it again, another great cereal.
I enjoyed some sprinkled on top of of a bowl of Dreyer's Slow Churn Yogurt Blends Caramel Praline Crunch. So good. The kitchen is officially closed for me for the night. I am enjoying a cup of Tazo Decaf Green Tea and am off to tweak my yoga sequence for tomorrows class. I hope you have a great rest of your Friday evening and I can't wait for the rest of the weekend!
