Antioxidant of Power

f234.jpgWe are leaving on vacation Sunday, so naturally I wanted to use up theeggs, bread, milk,etc.  French Toast seemed like a natural choice.  My priorfrench toast postwas about adding flax seeds to the mix, but let’s look at the cinnamon:

Holy Cow!Cinnamonis a powerhouse!  As I always say, ask yourself, “how many nutrients does that food have per calorie.”  Well, per calorie, spices and herbs have a lot of nutrients.  Only 6 calories per teaspoon, the antioxidants and phytochemicals ofcinnamonhave been shown to lower blood sugar in people with type 2 diabetes.  Its anti-inflammatory properties prevent clumping of blood platelets.  It also contains calcium, manganese, fiber, and iron.One thing to max out yourcinnamonon your french toast, sprinkle the cinnamon after putting the bread on your pan, not in the mix.
