Anne Lindsay’s Family Favourite Lasanga

When I crave a hearty, cheesy and meaty dish, I think about making a huge lasagna.

I have followed several lasagna recipes before, but this one is my favourite. It is easy to assemble, uses lower fat ingredients but still delivers the flavours I want.

This is also the first thing I ever made for the Boyfriend (before he became my boyfriend actually). I wanted to wow him with homemade food, but I wanted to make sure that whatever I made would taste good fresh and just as good as leftovers. Thus, I made him a lasagna — a dish that seems sort of messy but was delicious fresh out of the oven and stands well in the fridge and still taste just as good as leftovers.

I made the lasagna with lots of love, for both him and for cooking, so I think it definitely did the job of impressing him!

I first made the lasagna for him a little over 3 months ago and yesterday I made it for him again. What a trip down memory lane!

Now this lasagna will not only be the ultimate comfort dish for me, but rather one with sentimental, loving and sweet memory attached to it. (I know I’m bragging a little here…but bear with me!).

Anne Lindsay always delivers tasty and healthy recipes. Her cookbook, Lighthearted, is my to-go cookbook and so far it has not failed me. The lasagna recipe is stickie-tabbed and so are a few others.

If you have never tried any of her recipes, I highly recommend this one. It will not disappoint you, whether you’re just making it for yourself or making it for a party or perhaps a special someone like me, this is the recipe to try!

Anne Lindsay’s Family Favourite Lasagna
Adapted from Anne Lindsay’s Lighthearted

You’ll need:

  • 12 oz extra lean ground beef
  • 1 medium onion or 2 small ones, chopped
  • 3 cloves garlic, minced
  • 1 jar low-sodium tomato sauce (or 3 cups of homemade tomato sauce)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1.5 cups partly skimmed mozzarella cheese, shredded
  • ½ cup parmesan cheese, divided
  • 1 egg
  • 2 cups low fat cottage cheese
  • 9 pieces oven-ready lasagna noodles
  • What to do:

  • In a large skillet on medium heat, brown the ground beef until cooked, about 5 minutes. Drain the fat.
  • Add in onion and garlic, cook until onion is soft and translucent, about another 5 minutes.
  • Add in tomato sauce and dried herbs. Cook until heated through. Taste and add a teaspoon of sugar if too acidic. Pour into a medium bowl and set aside.
  • In a separate medium bowl, mix together mozzarella cheese, ¼ cup of parmesan cheese, egg and cottage cheese.
  • Preheat oven to 350F.
  • In a large casserole dish, put in a thin layer of sauce on the bottom, then add on noodles.
  • Add on half the cheese, then a layer of sauce, and another layer of noodles. Add on the rest of the cheese, then a layer of sauce and noodles again.
  • Top with the rest of the sauce and sprinkle on the remaining ¼ cup parmesan cheese.
  • Place into preheated oven for 45 minutes, or until bubbly. Remove from oven, let it sit for 5-10 minutes before cutting into it.
  • Tastes great when served hot or cut into individual servings to freeze for later!
