An Easy Fuss-Free Vegan Dinner Party Menu To Satisfy Meat-Lovers

Last Friday I made a yummy dinner for my mum, her husband, my partner and I. I had very little time to prepare the food (less than an hour total) as I was working late, and needed to pull together a fuss-free meal. I wasn’t looking for fancy ingredients or presentation (which you’ll see by the pictures – eek, sorry!). I was looking for great-tasting tucker that almost anyone could enjoy.
My mum’s husband is an ex-farmer from the country who loves his meat, potatoes and not a lot else. My mum is open minded and my partner is a Guinness loving Irishman. A range of tastes to please to be sure (yes the “to be sure” Irish reference was intentional. Just call me lame ).
I thought about the overwhelming love of potatoes around the table – both from the ex-farmer and the Irishman (I seem to be slurring on the Irish today…I love you I promise) and knew I had to create something that would provide the starchy comfort of potatoes in a clean recipe.
I also knew I could use this opportunity to show that salad can be enjoyable, not just something that acts as garnish to a steak, and to provide enough variety of flavour and texture in a simple 3-part vegan meal so that the lack of meat, cheese, and hard to digest starches wouldn’t be missed.
A colourful and seriously delicious menu of flavours and textures that almost anyone could find some pleasure in.

Here is the 3 part dinner menu plan I created to satisfy even the most un-vegan, unhealthy, un-green food loving critics! *Insert evil laugh here*. Something like this works: Bahahahahahahahahahahahahahahahahahhahaha!

Warm Sweet Potato, Spring Onion and Mustard Salad
A beautiful mix of steamed purple and orange sweet potatoes, mixed with chopped spring onion, snow peas, fresh dill and ginger.
I then created a fabulous dressing of the juice of 1 lemon stirred with 1 heaping tablespoon of dijon mustard, herbamare, pepper, 1/2 an avocado, 1 clove of chopped garlic and a few drops of stevia (to taste). I mashed this together to make the dressing and then carefully stirred it through the salad ingredients, adding the potatoes last. SO good.
Casey’s Classic Salad With Secretly Nutritious Dressing
I’ve been enjoying some version of this salad almost every night for weeks. I’m pretty much cheating on all other salads with this one and the affair is seriously passionate. Sorry pool guy, gardener and postman salads, this one is (currently) number one.
Really it’s just a combination of baby leaves of choice, spiralised zucchini, chopped carrot, cucumber and beetroot, cubed avocado, fresh basil and coriander, all dressed up with this amazing Raw Japanese Caesar Salad Dressing . This is such a hit of a dressing and you would seriously never know it had seaweed in it. I’m not sure the guests would have tried it if they’d known first .
Vegetable Chilli Stir Fry
I used to live off stir fries and lately I’ve been enjoying them again maybe once per week. I use a tablespoon of coconut oil in a hot wok, add in chopped garlic until it is just starting to lightly cook, then throw in your veggies, fresh chilli (I used 2 hot ones) and ginger.
These veggies worked great – broccoli, cauliflower, carrot, squash and snow peas. I used plenty of tamari (wheat free soy sauce) for flavour.
That was all it needed! You could also add lemongrass, coconut milk, shredded coconut, lime and any veggies you love.
Everyone walked away impressed, full and happy, without feeling tired or heavy. The power of high quality wholefoods, especially veggies! Win!
