An Apple a Day Keeps the Doctor Away

Good Morning and Happy Monday!

I hope everyone is having a good day so far.  My morning started out bright and early by training one of my favorite clients  (all my clients are my favorite) but she is silly and we tend to giggle a lot first thing in the morning.  She always puts a smile on my face and I feel grateful to have met her.

When I got home I  was starving.... not exactly sure why... but I was looking for something quick and filling and came up with a bowl of cottage cheese, topped with fresh strawberries and hemp seeds.  I slowly enjoyed every bite  while flipping through the new issue of Portland Monthly before getting the kids up and adam.  I got the inside scoop on five farmers markets that offer a bounty of fresh produce, handmade goods, and sustainable sustenance.  So excited!

After dropping the kids off at school, I ran to the gym and went to Body Pump.  It was a tough workout and I feel great right about now.  I have to admit that I was hungry when I got home and wanted to eat lunch at 10:30am but held out until 11:00am! 

I have a new favorite lunch that I can't seem to get enough of.... don't get too excited there is not much to it but it so delicious and satisfying and I love it!

1 apple, slicedsmear of Barney Butter15 Kashi TLC Whole Grain Crackers1 oz of Tillamook Sharp Cheddar Cheese

This is sort of a munchie meal and it takes a while to eat so I think I slow down and really enjoy it.  I do also believe that an apple a day keeps the doctor away.  I think it is pretty apparent that I love fruit and cannot really go a day without eating a banana or an apple for that matter.  Apples make me feel clean for some reason.

Speaking of pears, another good lunch that I made was a Pear & Goat Cheese Quesadilla.

Oh my this was freaking delicious!  It tasted like a piece of pie to me and the best part was that it was a super simple lunch to make and relatively healthy.
Pear & Goat Cheese Quesadilla
2 Corn Tortillas1 ripe pear, thinly sliced1/4 cup crumbled goat cheeseCooking Spray
Spray a skillet with cooking spray and then place tortilla topped with pear and goat cheese in skillet.  Add remaining tortilla on top to make a quesadilla.  Cook over medium heat for 1-2 minutes or until golden brown on each side.  Remove from heat and enjoy.

On a personal note, my husband has his first law school final this week and if you can send some good vibes this way that would be great.  Truth be told, I am looking forward to having my husband back this summer.  Do you think he will ever be normal again or does law change you forever?  Ha!  Let's just say he is a wee bit stressed out and that stress tends to trickle downhill and I am just trying to stay out of the way! 
My plan it to keep the house as tidy as possible and make good meals.  I unfortunately, can't help him study and am glad I don't have to.
