I have a new favorite lunch that I can't seem to get enough of.... don't get too excited there is not much to it but it so delicious and satisfying and I love it!

1 Fuji Apple, sliced1 oz. of Tillamook Sharp Cheddar Cheese15 Kashi TLC Crackers
This is sort of a munchie meal and it takes a while to eat so I think I slow down and really enjoy it. I do also believe that an apple a day keeps the doctor away. I think it is pretty apparent that I love fruit and cannot really go a day without eating a banana or an apple for that matter. Apples make me feel clean for some reason.

Speaking of pears, another good lunch that I made was a Pear & Goat Cheese Quesadilla.
Oh my this was freaking delicious! It tasted like a piece of pie to me and the best part was that it was a super simple lunch to make and relatively healthy.
Pear & Goat Cheese Quesadilla
2 Corn Tortillas1 ripe pear, thinly sliced1/4 cup crumbled goat cheeseCooking Spray
Spray a skillet with cooking spray and then place tortilla topped with pear and goat cheese in skillet. Add remaining tortilla on top to make a quesadilla. Cook over medium heat for 1-2 minutes or until golden brown on each side. Remove from heat and enjoy.

On a personal note, my husband has his first law school final this week and if you can send some good vibes this way that would be great. Truth be told, I am looking forward to having my husband back this summer. Do you think he will ever be normal again or does law change you forever? Ha! Let's just say he is a wee bit stressed out and that stress tends to trickle downhill and I am just trying to stay out of the way!
My plan it to keep the house as tidy as possible and make good meals. I unfortunately, can't help him study and am glad I don't have to.
