Amazing Late Night Snack

Due to an unexpected late afternoon snack at Caliente del Sol (home of the hottest hot sauce I have ever tasted...my lips and mouth burned and felt swollen and I only used a drop the size of the tip of my pinkie) where I consumed a small veggie soft taco and a couple bites of Edward's amazing veggie burrito.  Note: I say amazing but mean amazing for Honolulu standards.  For those of you in California, these burritos were good.  I digress.  So, Mexican food snack at 5:30 PM, cereal with banana and a tsp of chocolate peanut butter at around 7:30 PM, and then munchies around 9:40 PM.  (Breakfast was pumpkin oats, lunch was a YouBar, blueberries, a banana, and a tbsp of chocolate pb).  Do I eat a lot for someone who exercises almost daily and who walks about 3-4 miles everyday (to and from work and on other outings)?  I'm not sure. 

I was craving something crunchy, filling, and long lasting (in terms of consumption time).  I then created the perfect mix of crunch, veggies, protein, and flavor. 

Take one cucumber and slice, top with Braggs Amino Acids and pine nuts.
Fry one egg and one vegan Gardenburger in olive oil spray, add a touch of vegan pesto and a sprinkle of sea salt.
Eat happily!  Okay, it's kind of a lot of salty stuff but it sure hit the spot and it's better than wasting my calories on chips or processed foods.  

A great tip for those of you who like some flavor on raw veggies but don't really like salad dressing, use Braggs!  It's like a very low sodium soy sauce and it has veggie proteins in it.

I needed the extra protein to refuel.  Over the last several days I have worked my muscles hard.  Saturday was diving and swimming, Sunday was weightlifting, running, and push-ups, today was body-boarding (riding waves is more fun than almost anything)!
