Good Afternoon!

I am once again behind the ball and am playing catch up so I am just going to dive in and talk about life.  I have been a busy bee painting and have successfully finished one room and have one more to go. 

So here is the

The room feels much bigger and brighter and I am happy with the way it turned out.

Paint Color-Asian Jute

It is super thick paint and goes on like yogurt with the look of chiffon.  It was super easy to work with and I am looking forward to painting the dining room this weekend.  Now the next color is not so safe....I went with Green Iguana and am a bit nervous about it.  It is definitely going to be GREEN!!  I will let you know how it works out.

In March of 2001, Devine Color® launched in 15 stores. It would come to be known as the paint that went on like rich yogurt, with the look of chiffon. Why yogurt and chiffon? Well, everything about Devine has an authentic story that is rooted in Gretchen's history and experiences. It's a tradition in Puerto Rico to repaint your home for the New Year. Gretchen's grandfather always started right before Christmas with a Cuba Libre in his left hand, rattling the ice around to the rhythms that filled the air that time of year, and a paint stick in a bucket of rich white paint in his right. With every passing year, her family renewed the old and ushered in the new with drinking, dancing and rich white paint.

I am so far behind on my eats that I am just going to point out some of the highlights of this past week.  Shall I start with my oatmeal bowls? 

Ezekiel English Muffin topped with Almond Butter & Cranberry Apple Butter.  The Cranberry Apple Butter rocks and this was delish.  I also heard that you can make a delicious sandwich with Brie & Cranberry Apple Butter on a Baguette.  Yum.

Dinners have been quick and easy meals.  Below is a Mexican Egg Pizza.

Spaghetti Squash with Chicken, Spinach and Marinara Sauce 1 1/2 cups cooked Spaghetti Squash1/2 cup rotisserie chicken, shredded1 cup spinach1/4 cup marinara sauceGrated Parmesan Cheese
My kids love Spaghetti Squash and think it is fun to make.  I love the fact that 1 1/2 cups of spaghetti squash has only 64 calories.  It is super good for you and extremely filling.  I also ended up cooking my squash in the microwave and it turned out great.  You just punture the squash with a fork a few times and microwave it for 12 minutes.  Rotate every 3 minutes and voila you have cooked spaghetti squash.  I then slice it and scoop out the seeds and then scrape it into spaghetti threads.  That is the part my kids like to do.  
So I was at Whole Foods today and they were sampling Maca Powder and Golden Berries.  The Maca Powder is an Incan Superfood that I have been intrigued with for a while now and could not resist buying it once the woman told me that it was a great stress reliever.  My husband NEEDS some sort of stress release and thought I would see what he thinks.  They were serving it mixed into Chocolate Soy Milk and I thought Steve might actually like that.

 He seemed to really enjoy it and I will see if it helped with any of his stress.

I have grand plans for my bowl of oats tomorrow.  I am going to make Maca Oatmeal sprinkled with Golden Berries.  Yum.  I can't wait.... maybe I should make it for dinner tonight.

Last but not least a quick Tandoori Chicken, Pear & Cheddar Pizza.  Wow, this was a fantastic combination and I can't wait to make another one of these.

Tandoori Chicken, Pear and Cheddar Pizza
1 Whole Wheat Pita1 cup Spinach1/2 cup shredded Tandoori Rotissirie Chicken1 small red pear, thinly sliced1/4 cup grated sharp white cheddar cheese
Bake in a preheated 400 degree oven for 10-15 minutes until the cheese is melted and bubbly.  Remove from oven and let sit for a few minutes before diving in.  No need to burn the roof of your mouth like I did!
