a simple dinner + one more goal

I honestly thought January would slow life down a bit.

With the coming of 2011, I thought I would have time to do things like breathe, sleep, cook and exercise. I thought I would perhaps get the chance to watch Half-Nelson , which I’ve had from Netflix for more than two months now. I also thought I would say goodbye to the incessant pile of dirty dishes in my sink and hello to the five novels currently on my bedstand I want to read.

I thought wrong.

Instead, I’ve had the most overwhelming week in recent memory. I’ve spent the week working longer hours than usual, the evenings furiously writing to finish a freelance project and taking an advanced digital photography class {!!!}, helping family + friends with odds + ends and tomorrow, I am hitting the road back to Minnesota.

All good things, but all exhausting things. In my new nocturnal pattern of un-Holly like midnight bedtimes, I’ve found no room in my Everythingtarian brain for food creativity.

In other words, I’m relying on simple meals like this to get me by…

Two slices of toast with smashed avocado + two over easy eggs.

Pre-packaged (I told you I was giving up peeling poms this year) pomegranate arils.

And Coconut Bliss Cappuccino ice cream.

To overwhelm my self just a bit more, I’ve decided to add one more thing to my list of things I will do in 2011 :

I will travel somewhere.

I will study photography {in progress}.

I will run a sub-1:50 half-marathon.

I will volunteer.

I will make monthly budgets and stick to them {in progress}.

I will not de-aril a whole pomegranate {so far, so good}

And to preserve my own overscheduled sanity, I will start saying NO.
