A Little of This and A Little of That

Good Evening and Happy Hump Day!



I am having a very productive week so far and am hoping to keep the momentum going.  Yesterday, I juiced myself up with a FABULOUS Green Concoction that I will be sharing at my Juicing and Smoothie 101 Class this Sunday!   



Eating Salads

 Spring Pomegranate Salad
2 cups of Spring Mix Salad Greens1/2 cup of cucumbers, thinly sliced3-4 radishes, thinly sliced1/4 cup of pomegranate seeds
Dressed with:  1 tbsp dijon mustard, 1 tbsp balsamic vinegar, 1/2 tbsp olive oil, sea salt and black pepper.
So yummy!

 Yep, Canteen and we got the Portland Bowl!
The Portland Bowl is packed with quinoa, black beans, maple tempeh, “NW sauce”, kale, carrots, and local hazelnuts.  I added a little avocado, just because.

I also have been hanging out with these two crazy kids.  Emmet and Zoe have been happy little campers this week.  Spring soccer has  started and Ms. Zoe is now double dipping with Basketball and Soccer and Emmet has been long boarding and going to the Power Play class at The Refinery .   Spring is in the air!
