As we are moving into the cooler months I am switching up my routine a bit and eating more warm and nourishing meals instead of my light and bright green juice and salad routine. Don't get me wrong, I am still drinking the green stuff from time to time but have been craving steel cut oats, soups and warm salads, like the one below. Pumpkin- I was one of those that eschewed pumpkin pie for years. I now love the stuff and can't seem to get enough of it. I use pumpkin puree to make a nice greek yogurt parfait by mixing pumpkin puree with pumpkin spice and then layering yogurt and pumpkin mixture, in a mason jar topping it was crunchy hazelnuts and drizzle of honey. Oh my goodness, this is delicious. I also have made a pumpkin curry that is out of this world good. My son, Emmet loves Pumpkin Pie so I have created a healthier recipe that I will share with you soon. It is super good! Kale- I have been crazy about Kale for a while now and have been making Kale Chips galore. My favorite dinner is a base of Kale, finely shredded and lightly massaged, dressed with vinaigrette and topped with roasted sweet potato, toasted hazelnuts and a tablespoon of Zante currants. Hazelnuts- I have been on a bit of a hazelnut toot lately. I absolutely love them and have been sprinkling them over my oats, yogurt and salads. So delicious. Hazelnuts are also loaded with folate and vitamin E. Have a great rest of your day!
