5 Favorite Fall Foods + Delicata Squash and Smokey Black Bean Salad

Posted Oct 23 2012 8:18pm

  • Happy Tuesday Everyone!
  • As we are moving into the cooler months I am switching up my routine a bit and eating more warm and nourishing meals instead of my light and bright green juice and salad routine.  Don't get me wrong, I am still drinking the green stuff from time to time but have been craving steel cut oats, soups and warm salads, like the one below.

  • Right now, I have been really into the following 5 Favorite Fall Foods:
  • Squash- Delicata, Butternut, Acorn
I love roasting it and adding it into soups, salads and eating it straight- up.

Apples-  OMG, there are so many different kinds to choose from and I am literally going to the Farmer's Market and picking up one of each kind and doing taste tests.  I have made a healthy gluten free apple crisp , eaten them sliced with nut butter and shredded in overnight apple pie oats (I am blogging about that tomorrow.)
Pumpkin- I was one of those that eschewed pumpkin pie for years. I now love the stuff and can't seem to get enough of it.  I use pumpkin puree to make a nice greek yogurt parfait by mixing pumpkin puree with pumpkin spice and then layering yogurt and pumpkin mixture, in a mason jar topping it was crunchy hazelnuts and drizzle of honey.  Oh my goodness, this is delicious. I also have made a pumpkin curry that is out of this world good.  My son, Emmet loves Pumpkin Pie so I have created a healthier recipe that I will share with you soon.  It is super good!
Kale- I have been crazy about Kale for a while now and have been making Kale Chips galore.  My favorite dinner is a base of Kale, finely shredded and lightly massaged, dressed with vinaigrette and topped with roasted sweet potato, toasted hazelnuts and a tablespoon of Zante currants.
Hazelnuts-  I have been on a bit of a hazelnut toot lately.  I absolutely love them and have been sprinkling them over my oats, yogurt and salads.  So delicious.  Hazelnuts are also loaded with folate and vitamin E.

  • Anyhow, I made the best dinner last night and must share it with you ASAP!   I am so in love with all the different squash varieties right now and have a particularly soft spot for the Delicata Squash.  I love the fact that you don't have to peel it because I have almost cut my finger off several times trying to peel Butternut Squash.  Delicata Squash also has a sweetness to it that was perfect for this salad.
  • Delicata Squash and Smokey Black Bean Salad
  • This salad hit the spot with a bit of sweetness, a touch of smokiness and lots of texture.

  • I am off to help Emmet with his Pumpkin Globe of the World Project.  Time to get creative!
  • Have a great rest of your day!
