400 calorie breakfast: Egg white scramble, berries, and toast

Morning! Here is how I started my day today:
Scrambled eggs whites with feta, spinach, and basil with mixed berries and whole wheat toast.
Romeo wanted some!
The recipe is easy and only took about 10 minutes total. Egg white scramble: Ingredients:1 cup egg whites or egg substitute (I used Publix Eggstirs)1/2 cup fresh spinach1/4 cup reduced fat feta cheese1 tbsp chopped garlic1/2 tbsp basil paste or fresh basil (pasta is available in a tube near the produce section)Pepper to taste Directions:1. Heat stove top to medium heat and in a pan, combine the garlic and basil paste. 2. Once pan is heated, add 1 cup egg whites and spinach.3. Cook egg mixture until scrambled and spinach wilts.4. Add feta cheese and stir until melted slightly. (Do not melt completely as you will want some chunks of feta to remain.)5. Pepper to taste and top onto toast if desired. Toast:Ingredients: 2 slices Whole Wheat bread (60 calories per slice) Directions:1. Toast the bread until reaches desired crispness.2. Top with egg scramble, if desired. Mixed Berries:Ingredients:1/2 cup blueberries1/2 cup blackberriesDirections:1. Rinse berries, measure 1/2 cup of each and serve. Enjoy!!Lacey D
