I blended up tomatoes in my VitaMix and followed these directions . I decided to add a green bell pepper, onion and minced garlic. Sauted first! I also decided to add a pound of ground beef.
Then I started to layer!!! I topped the delicious zucchini lasagna with a cashew cheese. Bake at 350 degrees for 25 - 30 minutes. You want to make sure the zucchini is tender and not mushy! I didn't stop there!!!
