
Hi Lara,
I have found that all the root vegetables, especially winter squash, are delicious when roasted. Just peel, cube and coat with a little olive oil, salt and pepper. Roast in a hot (400F) oven till tender. This will depend on the size of your chunks...about 20-30 minutes for small cubes and longer for larger ones.
