This is the perfect dish to take to a brunch/barbeque or eat as a snack or for lunch or dinner. It is very versatile and you can throw almost any chopped veggies into the salad. Enjoy!
Wild Rice Cranberry Pecan Salad
1 cup wild rice blend (I like the Lundberg brand)
1/2 teaspoon salt
1/2 cup dried cranberries or dried cherries
1/2 cup chopped pecans (you can use almonds)
1/4 cup sliced green onions
juice from one orange
2 Tbsp olive oil
1 teaspoon grated orange peel
Salt and freshly ground pepper
Prepare rice according to package. When done, uncover, stir with a fork, and let cool to almost room temperature.
Use a microplane grater and zest the orange. Then squeeze the juice from the orange into a small bowl (remove any seeds).
Add all ingredients to a large bowl. Stir well. Serve warm, chilled or at room temperature.
