Hello everyone and Happy WIAW!

Spooky Snacks and Healthy Halloween Treats
Thanks Jenn for hosting once again!

For some reason lately, my tastes have been changing a bit, but in a good way! I’ve been craving more vegetables and less fruit, whereas it’s usually the opposite. I often wonder if our bodies have some higher wisdom for what we actually need. For instance, there are times when I crave red meat, and I wonder if during those times I’m slightly more anemic….this logic, however, would not explain a Butterfinger Blizzard craving (which I have often, I might add).

Soooo, on that note, here’s what I’ve been eating!

Lots-o- Pancake Batter Smoothies ….

…these babies are like overnight oats, in smoothie form, on steroids…..HOLY YUM!

Salads galore…

….I like a simple dressing of 2 parts olive oil to 1 part balsamic vinegar and some salt and pepper….


This Yellow Split Pea Soup has been added to my recipe queue for the 4 of you out there that like soup….

Homemade Mint Crisp Chocolate Lollipops!…

Jadie and my hubby have been inhaling these! I’ll be sharing the recipe before the month is over!

For today, I have a delicious cold chocolate coffee drink that I’ve been lovingly calling Chocomo (pronounced choh-coe-moe). My husband is a big coffee drinker, so I had him in mind when creating this….

This dairy-free mocha combines frozen coffee, chocolate, and coconut milk for a rich, yet healthy, pick-me-up that rivals anything Starbuck’s has in quality or price!


1 1/2 c. coffee, frozen into ice cubes

3/4 c. + 2 T. light coconut milk

1 1/2 T. cocoa powder

1/2 T. carob powder

1 t. vanilla

1 1/2-3 t. honey or maple syrup, depending on how sweet you like it

13 drops liquid stevia

dash salt

Blend all.

Are you a coffee drinker?

I used to drink a ton of coffee and diet soda, but now I really try to avoid it…except in chocolate. All bets are off when it comes to chocolate. ;-)
