Whole Wheat Honey Cake

It's been a difficult few weeks. My grandmother passed away, and everything else became a blur. We're leaving for Portland Oregon on vacation in a week, but I've been too consumed with sorrow to even think about the trip.

Whole Wheat Honey Cake
4 egg whites
3/4 cup honey
1 cup raw turbinado sugar
1/2 cup canola oil
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 T cocoa powder
2 cups whole wheat flour
1 cup strong brewed coffee (I used a spicy espresso roast)

~ Preheat the oven to 375 degrees F, and coat an 8X8 baking pan and a loaf pan with cooking spray (yep, this recipe makes an odd amount.)
~ Whisk together the egg whites, honey, sugar, and canola oil.
~ Whisk in the baking powder, baking soda, cinnamon, and cocoa powder.
~ Stir in 1 cup of flour, followed by the coffee, followed by the last cup of flour.
~ Divide the batter between the 8X8 pan and the loaf pan, and bake for 30 minutes - until a toothpick inserted in the center comes out clean. Allow to cool in the pans, and serve with whipped cream!

As the sun sets on the past year, may the sun rise with joy on the new...
