So I am especially grateful that last night heralded the arrival of Rosh Hashanah, the Jewish new year. I am praying for renewal this year. I am praying for a year of less sorrow, less grief, and less suffering all over the world. A year of peace, a year of light, a year of hope. A year as sweet as honey cake...
Whole Wheat Honey Cake
4 egg whites
3/4 cup honey
1 cup raw turbinado sugar
1/2 cup canola oil
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 T cocoa powder
2 cups whole wheat flour
1 cup strong brewed coffee (I used a spicy espresso roast)
~ Preheat the oven to 375 degrees F, and coat an 8X8 baking pan and a loaf pan with cooking spray (yep, this recipe makes an odd amount.)
~ Whisk together the egg whites, honey, sugar, and canola oil.
~ Whisk in the baking powder, baking soda, cinnamon, and cocoa powder.
~ Stir in 1 cup of flour, followed by the coffee, followed by the last cup of flour.
~ Divide the batter between the 8X8 pan and the loaf pan, and bake for 30 minutes - until a toothpick inserted in the center comes out clean. Allow to cool in the pans, and serve with whipped cream!
