Whole Green Mango Pickle

Ingredients

1, 1 kg small green mangoes
2, 100 g salt
200 g red chillies
4, 100 g mustard seeds
5, 1 tablespoon pepper ( optional )
6, 1 tablespoon asafoetida
7, ½ tablespoon turmeric powder
8, 1 pod garlic

Method

Clean the mangoes with a dry , clean cloth , mix with salt and keep in an earthen jar for 5 to 6 days. It should be mixed daily by hand. Dry the chillies in the hot sun for a few days and then powder.

Grind the mustard , pepper, asafoetida and turmeric with salt and water from the soaked mangoes. Add powdered red chillies and mix all together with the green mangoes. Skin the garlic and mix it with the mango mixture. Store in an earthen jar.The pickle is now ready.

On top put a cloth dipped in til oil and turmeric powder. Then tie the top firmly with a cloth to make it air tight.
