White Chocolate Ginger Pecan [Vegan] Multigrain Pancake Mix (Recipe Redux)

I was so excited to be asked to join The Recipe Redux–reinventing the idea of healthy eating with a taste-first approach–this month–
–and, although I may have waited until almost the last minute to come up with something both healthy and delicious for this month’s theme…
…I think y’all all will agree it was worth the wait procrastination.
This month’s theme was Adding Merriment to Mixes:
From hostess gifts to holiday gifts, it’s the season for DIY offerings from your kitchen. And homemade mixes couldn’t be easier! Think about healthy bread, hot cocoa, cookie bars, dressings or even spice mixes.
Share the recipe for how you package up a little shelf-stable love from your kitchen!
My favorite mix might be ChexCheez-ItMunchies trail mix, but I’m sure everyone one of you is creative enough to figure out how to create THAT (yes, very thoughtful and lovely) gift and pour it into Mason jars.
But are all of you sufficiently creative and mathematically minded to spend some quality time with your computer’s calculator modifying other people’s recipes ?
I reduced the quantity from the original recipe to fit snugly into one, standard Mason jar, but if you have a lot of teachers, faculty members, co-workers, teammates,or friends to make these for, feel free to multiply to your heart’s content.
I also rather arbitrarily decided upon what grains made up the ‘multi’ in this mix, but you could obviously substitute. (Although the instant oats are key because they help soak up liquid when you prepare the actual pancakes.)
Speaking of pancake prep, I like these vegan-ized, but adding an egg will give you a little more fluff in the final product.
The mix is rather wonderful on its own, but you might as well get a little creative and customized with it. Keep on, keeping MIXING onin.
And, OK, white chocolate might not be the healthiest chocolate–not really being chocolate at all (and actually making these not vegan, depending on what you use)–but I’m calling them the merrimentin this mix.
Maple syrup would be good, but I’ve had a thing for molasses lately…which is a good source of iron, Vitamin B, calcium, and manganese.

After all, isn’t that what Recipe Redux is all aboutMultigrain Pancake Mix(Makes 2 cups, or enough to fill one Mason Jar and make 20 pancakes)Mix
1/3 cup whole wheat pastry flour
1/3 cup corn flour (or masa harina)
1/3 cup quick cooking oats (or rolled oats pulsed in the food processor)
1/3 cup spelt flour
1/3 cup brown rice flour
2 Tbsp. ground golden flax
1 Tbsp. baking powder
1 Tbsp. sugar
1 1/2 tsp. ground cinnamon
1/2 tsp. ground ginger (optional)
1/2 tsp. salt
1/3 cup (optional) additions: nuts, chocolate chips, crystallized ginger, dried fruit
1 cup mix
1 1/3 cup alterna-milk
Pancakes (Not Vegan)
1 cup mix
1 cup milk, alterna-milk, yogurt, or some combination
To prepare mix:
Combine all mix ingredients in a large bowl. Stir well to combine.
Store (or gift!) mix in a glass Mason jar.
To prepare pancakes:
Combine ingredients in a mixing bowl, stirring well until batter forms.
Cook pancakes over medium heat in an oiled pan, flipping once bubbles begin to form on the uncooked side.
