What's in your slow cooker?

Posted Oct 01 2011 4:32pm

The beets that went into the cabbage and yellow beet borscht.

Today is the first day of VeganMoFo, and I might as well accept that I'll be double-stick-taped to my computer chair posting and reading blog posts for the next month. With today as the exception, I'll be posting every weekday, taking the weekends off to catch up. I've got a plan in mind for each week, sort of, subject to change, that I'll be trying to stick to, kind of. Does that sound wishy-washy? Nah. It's classic Libra mind-changing creative license. (You Libras know what I'm talking about.)

The golden beets, again. So pretty — for beets.

For week 1, the plan is to highlight other people's recipes. Some will have recipes to link to, and others, like today's, will just be taunts. So without further ado, here's a look at all the recipes I've tested so far for Robin Robertson's in-progress, new, slow cooker cookbook. Don't you wish you could have the recipes?

Braised Manchurian-style cauliflower

Potatoes with tomatoes and butter beans.

Layered tapenade potatoes.

Chipotle black bean chili with winter squash

African-inspired peanut stew

Moroccan eggplant and artichokes

Greek frittata

Chickpea and artichoke-mushroom paté

Yosenabe

Autumn fruit compote

Creamy polenta with mushroom ragu

Applesauce cake

Balsamic vegetable crock

Cabbage and yellow beet borscht
