Egg whites seem to be back in a big way. Maybe because it's January... Three whites is ONE Weight Watchers point! Yay! This means you can scramble up six of them with some veggies for a substantial 2 point meal that will not leave you hungry because of the protein. Once I come up with a good recipe, I'll post it here!
I love to scramble three egg whites with some lunch meat (i have smoked ham that's one point for two slices), thinly sliced bell peppers, onion powder and some tabasco. I then insert this into a whole wheat pita (one point). sometimes i add 1/2 slice of pepper jack cheese which is one point.
I like to make an omelette with smoked ham, tomato, mushrooms, onion and low fat cheese. I buy two chicks egg white in a carton from my local Waitrose because i can't be bothered to separate so many eggs!
