Ways with Broccoli

From "Cooking Without a Grain of Salt." Broccoli is a moderate potassium vegetable, with 127 mg in a 1/2-cup serving.

Soak broccoli in cold water for 10 to 15 minutes. Shake off water and remove large leaves and tough part of the stalks. Gash bottoms of stalks. Cook broccoli in 1 inch boiling water in covered pan for 10 to 12 minutes.

Combination of herbs are for 4 servings. Add in the last 5 minutes of cooking time.

1/4 teaspoon nutmeg

1/4 teaspoon dry mustard

1/4 teaspoon caraway seed

1/4 teaspoon basil

1/4 teaspoon curry powder

1/4 teaspoon oregano

1/4 teaspoon dill (ground or seed)

1/4 teaspoon dry mustard

1/4 teaspoon chervil

Clove of garlic

Heated unsalted butter or margarine or low-sodium mayonnaise mixed with lemon juice may be used as a sauce. Garnish with paprika. Makes 4 servings.
