I can’t tell you how many times I have snapped a photo of something I’m eating with the full intention of sharing it with you all, only to never get around to posting it. Usually something more interesting comes up, I’m too lazy, or I just plain old forget. It happens.
That’s why today, instead of showing you the same old cereal, turkey sandwich, carrots, hummus, etc (though don’t be fooled- they are in here too), I thought I would share an iPhone photo dump of some of my eats from this summer. I know you’ve seen some of these photos before, but my hope is that there will be some new eats in here too that maybe you’ll find interesting.
Also I should note that while most of it is pretty healthy, there are a few other meals in here that are decidedly not. But that’s a pretty good representation of my eating habits anyway, since I try to follow an 80/20ish rule, so I think this post will be a good portrayal of my eats lately.
Ok. You’ve obviously you’ve seen this one before….
…it’s clearly an old favorite around here. I’d say I eat this cereal and fruit combo at least five days a week. Yup. I’m a creature of habit. And I like it.
On the other two days of the week though, I like to switch it up! Sometimes Fabio will cook me a cheesy arepa with eggs, which I will enjoy either alone or with turkey sausage/turkey bacon.
One weekend this summer Fabio made me a turkey sausage, egg, and cheese sandwich on a croissant that my dad gave us. Holy yum. Wish I could eat this every day without gaining a gazillion pounds.
There was a brief spell where we ran out of either milk or cereal (I forget which) so I was having blueberry yogurt with granola and fresh berries. This combo was really tasty, and it was a good change of pace.
So you’ve obviously seen this meal before: the standard turkey sandwich thin, carrots, and hummus. Again, I usually eat this meal about four times per week (the other work days I’ll bring leftovers or eat out). Like with my breakfasts, on the weekends I try to eat something different. One of my go-to options looks something like this: grilled cheese, carrots, and hummus (still loving the carrots and hummus obviously).
Another popular option is tuna salad, usually made with mustard, greek yogurt, carrots, and onion (plus celery, when we have it). I like to eat this with saltine crackers crumbled up in the bowl. YUM!
I don’t usually show you guys all the snacks that I eat throughout the day, usually because by the time I think about it they are already gone! I would say the snacks that I eat most often are raw almonds, mini babybel cheeses, apples, and prunes (SunSweet prunes are SO good and pretty cheap from Costco).

Then there is my standard 3:30 pm work snack: an apple and unsweetened (hot) green tea
Pringles, eaten while camping (this isn’t What Fabio Ate Wednesday, but I like this picture)
Weekend snack: a flatbread “pizza” made on a tortilla (these tortillas come from Costco and are DELICIOUS, plus their shape makes them a little easier to roll). This would be an afternoon snack for both Fabio and me.
Here are a few weeknight dinners I had recently…
Baked chicken with homemade garlic bread crumbs along with brussels sprouts and salad
Rosemary tilapia with leftover red beans and a veggie medley (like my description there? Haha. This was really just roasted onion, broccoli, carrots, and squash).
Chicken tacos with corn and red beans
Spaghetti squash with some type of cheesy sauce (made with laughing cow cheese), broccoli, carrots, and chicken sausage
Homemade whole wheat pizza with basil (this is a typical Friday night meal)
Saltenas . Yum. (Sometimes this is a Sunday night dinner)
Typical dinner at my dad’s house: steak, baked potato, corn, veggies
Dinner out: veggie chicken flatbread pizza with balsamic glaze from Arlington Rooftop (SOOO good)
Falafel + greek salad from a place in DC
Chicken fingers and fries, shared with Fabio at happy hour

Is it weird that I don’t have any dessert photos to share with you guys? I think I must delete them from my camera because they are evidence! Haha! But you have seen that I usually have low-calorie fruit popsicles a couple times during the week, and occasionally enjoy something more decadent like cake or pie if I visit my mom’s house. Dessert is my biggest weakness, but I have been trying to cut down on sweets lately and I think overall I’m doing a good job on that. Progress!
Even though this post has highlighted my eats from the last couple of months, I thought I would still tell you about yesterday’s daily activity. Yesterday was another three mile run (sorry if this seems redundant from week to week, but my half marathon training plan makes most Tuesdays three miles…today for example, is a four-miler) and it went really well! Check out that improvement! Not bad, huh? I have to say doing sprints over Key Bridg e seems to be helping my overall speed! Especially when conquering the mile-long hill of death in Rosslyn on my way back home. Woohoo!
