Hey there people! Woah, it’s a super busy day over here today!
In addition to the normal Wednesday craze at work (I usually have a million meetings to run to), my friends and I have been trying to figure out our weekend plans, book a trip to Puerto Rico in April, and buy tickets to see Beyonce in August. Seems like my social calendar is filling up pretty quickly for the year. I’ll take it!
Here are a few fun things on my agenda:
February: Valentine’s Day (Fabio said he’s going to make me dinner…we shall see how that works out lol)
June: Not sure yet- but I usually go up to NY for Kristen’s birthday
July: I’m sure I’ll do something fun for July 4 since it lands on a Thursday this year
August: Hopefully Beyonceeeeee!
Then comes a stream of birthdays and holidays, which are always fun!
Phew. Look at all those fun things in my future I’m not sure if they will all stay the same (plans are always bound to change) but the next few months are lookin’ pretty good to me!
Anyway, enough chatter about the future; let’s focus on today. It’s Wednesday which of course means it’s time for What I Ate Wednesday.
This week Jenn challenged us to “vegi-fy” our meals, and I have to admit I didn’t do a great job with this yesterday. Usually I like to think my What I Ate Wednesday posts are filled with a variety of veggies, but since I was so focused on using up the leftovers from the super bowl that are taking over my life fridge, the veggie showing was a little limited yesterday. Hmm. I’ll have to work on that for next week.
Anyway, here’s what I ate yesterday!
Are you getting tired of seeing this one yet? Well too bad, because I’m not tired of eating it yet Haha! I have still been loving my bowls of cereal + a banana in the morning. It’s just so easy, quick, and satisfying. In this bowl was 1/4 cup of Fiber One Original Cereal and 1/2 cup of Trader Joe’s Fruitful O’s Cereal plus some skim milk. So good!

One thing is clear to me from this picture: spaghetti squash is not sexy in photos. At all. Oh well, this delicious – albeit, giant – container of spaghetti squash was my lunch yesterday along with two meatballs and tomato sauce leftover from the super bowl. This meal was soooo good and I was full for hours. Literally. That was a lot of squash. And you better believe I ate it all. Yeppp. I did.

Even though the spaghetti squash kept me full for hours, I started getting munchy again around 4:30 pm. Luckily I had a few roasted almonds stashed in my desk so I ate a few of those while sipping on some Passion Fruit Green Tea from Honest Tea. I’ll do a full review of Honest Tea tomorrow (what a fantastic company!) but for now let me just say this tea was tastyyyy.

Oh man, you guys. This might not look like much, but this was a great dinner. The first words out of Fabio’s mouth were, “Wow you better blog about this one!” No joke.
All I did was take some BBQ pulled pork that we had leftover from super bowl and combine it with some cilantro-quinoa, corn, black beans, and tomatoes. I did sautee it all up together in a big skillet with some onions and garlic, but that’s really it! The flavors just worked so well together and this dish was fan-tastic. Plus it made enough for two servings of leftovers. Win!
On the side I had some fried plantains (Colombian style) since Fabio picked some up at the Asian supermarket (3 for $1) last week. These were easy and delicious so I will probably be making them again tonight

Even though I already had a ton of good eats yesterday, my sweet tooth struck after dinner and I wound up eating a peanut butter cookie that my friend Courtney made for the super bowl. Well guys, I’m going to have to get the recipe from her to share with you because they were moist, soft, and had the perfect amount of peanut butter. So tasty!! Thanks Court! They’re all gone now haha!

Daily Total Weight Watchers Points Plus: 28 (two more than goal)
Daily Activity: I didn’t do too much in terms of activity since I am trying to rest my knee , but I did do some low-impact exercises with 5 lb. weights and kettlebells while watching TV. I suppose that’s better than nothing. I also reached my daily goal on my Nike Fuel band, meaning I walked 4.3 miles, took 10,441 steps, and burned 926 calories (though I don’t think that last part is very accurate based on times that I’ve worn my heart rate monitor and compared).
Daily Activity Points Earned: 1
Allin all I’d say not a bad day of eats, right?
