You already have a pot of cooked brown rice, or wild rice and you just need a little “something” to go with it. Ideally, that something should take no more than ten minutes to make. This easy vegan and gluten-free stir-fry won’t take much of your time in the kitchen, yet it is healthy, filling and nourishing for the whole family.
The acidity of tomatoes balances the natural sweetness of the rice well, while slightly bitter kale compliments the moist Shitake mushrooms. Overall, it is a quick and healthy family meal that doesn’t take much time to make: one of my favorites.
