2 cups basmati rice 50 g carrots, cut into 1- inch thin pieces 50 g French beans, cut into 1 –inch pieces 50 g green peas 1 tablespoon ghee 4 cloves 4 cardamoms 4 pieces cinnamon 4 onions , sliced ½ - inch piece ginger, crushed 4-6 flakes garlic , crushed 1 ½ teaspoon chili powder 2 tablespoon coriander leaves , chopped 6 green chilies Salt to taste 4 to 4 - and – a – half glass water ( depending upon rice )
In a pressure cooker heat the ghee, then add the cloves, cardamoms , cinnamon , sliced onions and fry till some time. Add crushed ginger and garlic. Add the rice and fry for some time. Then add all the vegetables, chilli powder, turmeric powder , coriander leaves, green chillies, salt and water. Close cooker and cook for 5 minutes under pressure. Switch off the gas flame. Allow to cool naturally. Open the cooker and decorate with sallow fried onions and nuts( optional ).
