Vegetable Kolhapuri ( A traditional Maharashtrian mixed vegetable dish )

Serves : Four
Time required : 25 minutes


125 g carrots , diced
125 g cauliflower , cut into florets
125 g French beans
125 g fresh mushrooms , quartered
125 g green peas
½ desiccated coconut , roasted till brown
Salt to taste
Juice of 1 lemon
225 ml water
½ cup oil
6 green chilies , ground to a paste
1 pod garlic , ground to a paste
20 red chillies
10 – 12 black pepper corns
2 cinnamon sticks
5 cloves
1 teaspoon mustard seeds
1teaspoon fenugreek seeds
1teaspoon cumin seeds
1 teaspoon shahjeera ( black cumin )
1 teaspoon turmeric powder


1 Fry all the spices in 1 teaspoon oil and grind to a fine paste.

2, Heat the remaining oil and shallow fry all the vegetables . Remove from oil , drain and set aside.

3 , In the same oil , sauté the ground paste for a few minutes. Add the fried vegetables and around 220 ml water.

4, Cover and cook on a low heat till the vegetables are cooked and are well coated with the masala. When thoroughly cooked , stir in the roasted coconut and lemon juice. Season to taste. Serve hot.
