Vegan whole wheat blackberry banana bread (snow day baking)

It has been snowing steadily since last night.  It is truly a winter wonderland out there!


I bundled up (beanie, scarf, waterproof shell, fleece, long-sleeved shirt, long underwear, rain pants, thick wool socks, and rainboots) and trekked outside for awhile.  My excuse was going to Target, but really, I just wanted to walk around outside!  I *love* clean, fresh snow!

Once I got home, what else was there to do but bake?

Vegan whole wheat blackberry banana bread


Adapted from BellaEats ' recipe

Ingredients:
1/3 cup light brown sugar
1 1/4 cup white whole wheat flour
1 tsp baking soda
1/2 tsp sea salt
2 tsp ground cinnamon
1 tsp ground nutmeg
1/2 cup applesauce
2 ripe bananas
1 cup frozen blackberries 
Steps:
  1. Preheat oven to 350. 
  2. Mix wet ingredients.
  3. Mix dry ingrediens.
  4. Add wet to dry, gently mix together.  
  5. Pour batter into loaf pan and bake for about 45 minutes.
  6. Let cool for 5 minutes in the loaf pan then release and cool on rack for 10 more minutes before slicing.
