I tried out an experimental batch of this much healthier alternative to the classic no-bake cookie ahead of time on Wednesday, and they were a huge success for dessert - and even better for breakfast the next day...
Healthful Vegan No-Bake Coconut Peanut Butter Cookies
1 cup rolled oats2/3 cup unsweetened coconut flakes1/2 cup peanut butter1/2 cup ground flax seed1/2 cup dark chocolate chips1/2 cup maple syrup
Simply stir together all the ingredients, roll the dough into balls, and voila!
And in honor of the new semester and new year, my hair is now extra red... :-)
