These recipes sound fantastic. I've also tried a new recipe lately making mixing a can of pumpkin into a chocolate cake. Adds some betacarotene an other micronutrients.

Can the sugar in these cupcakes and "arrows" be replaced with a Splenda or other no-cal sweetener?
