Two New Recipes & Weekend Recap!…

Hi there!  Happy Monday to you!  I hope all of you had a great weekend! What did you do this weekend? I feel like this weekend went by so quickly.  I was trying to savor every last-minute of Friday because this Friday coming up is my last summer Friday.  That means I will have to start working full days on Friday again after Labor Day.  I must say that I can’t remember what that is like even though I’ve really only been doing it for a little over a month.  It’s been quite nice.  Sadly, full days will be coming back.  I guess I can handle that especially since I really like my job now.

Anyway, on Friday after work, Melissa and I went over to Sam’s Club to take a look and see if anything was worthwhile there.  I really wanted to grab a rotisserie chicken but I decided against it because Mike and I already had a decision of what we were eating for dinner that night.  I really want to get another one of those chickens because they are just so good and at a great price.  I haven’t had one in so long.  I think next week will definitely call for one.

After looking at Sam’s, we ventured to the library so I could take out a book that I wanted to read and then we went to Kohl’s.  I’m so glad that Melissa and I went together because she helped me find the cutest blazer to wear with dress pants!  I needed a new blazer for a meeting that I have coming up and this one is super cute.  It’s modern looking and very flattering for my body.  I am looking forward to wearing it. Plus, I got a really good deal and was able to use two coupons on it!  Score!!  After shopping, we stopped at Starbucks for an iced coffee and then I went back and spent some time at Melissa’s house for a while.

For dinner, Mike and I made Ranch Turkey Burgers!!

Ranch Turkey Burgers

Ingredients:

1 pound of lean ground turkey

1 Ranch Dressing Packet

Ketchup

Mix the ground turkey in a large bowl with some ketchup and the entire Ranch dressing packet.  Mix until it is well combined.  Then divide the turkey into four patties and either grill or bake.  Enjoy!

This recipe is beyond the point of simple.  We added ketchup just because we really like the flavor that the ketchup brings to the turkey burgers.  We found that if you make this a day before you are planning on using it, and let the patties sit in the fridge over night, the flavors are THAT much better!  It’s worth it.

The Ranch brought so much flavor to the turkey burgers.  I really liked them a lot.  I am just on this Ranch dressing kick and I don’t know what it is but it really is adding some great flavor to all of our dinners and I’m liking it.  It changes things up a bit from what we were usually eating and I’m liking where we are going with this.

We ended up renting a Redbox movie, called The Big Wedding.  I thought it was just an okay movie.  I wouldn’t watch it again or buy it.  I liked that it had Diane Keaton and Katherine Heigl in it because they are two of my favorite actresses.  That was the only high point of the movie.

On Saturday, I was finally able to catch up a lot on my dvr which made me happy.  After doing that, Mike and I went to Bed, Bath and Beyond.  We have a credit from returning some items that we didn’t need.  So we were able to get a brand new trash can, a dish drying rack, and new pots and pans.  I am SO excited about the pots and pans!  We have been using a really awful set that we bought for very cheap when we first moved in together.  So I’m definitely looking forward to using an actual adult set!  Yay!

For dinner, we went to a new restaurant in our area but I didn’t bother taking any pictures.  The food was just okay.  The service was not very good.  The waitresses all had a snobby attitude which was off putting for a new restaurant.  I don’t know that I will go out of my way to go back.

On Sunday, we did our normal supermarket shopping.  We were able to get pretty good deals again due to my couponing.  I was very glad about that.  We also decided to make Skillet Chicken Marsala for dinner.  I have made this before on my blog but I am going to post about it again.

Campbell’s Skillet Sauce Chicken Marsala

Ingredients:

1 pound of boneless skinless chicken breasts

1 tablespoon cooking oil

1 package of Skillet Marsala Sauce

1 pound of pasta

Heat oil in skillet over medium-high heat.  Add the chicken and cook until browned.  Sit in the sauce and heat to a boil, reduce heat to low.  Cover and cook for 5 minutes or until the chicken is cooked through.  Add the pasta to the skillet and mix with the Marsala sauce.

I really enjoy this packet. I think it brings great flavor and it makes cooking a lot easier.  I would definitely purchase it again.  I’m looking forward to leftovers tonight.
