Turkey Pot Roast

1 leek chopped
1 small sweet potato
2 small turnips1/2 c. carrots chopped1/2 c. celery chopped6 cloves garlice peeled and whole1/2 c. tomato paste2 tsp. oregano dried1 tsp. rosemary dried2 tsp. thyme dried1 12 oz. bottle dark beer <--now that's what I'm talkin about!
Method:Season turkey very well with salt and pepper.  Sear on skin side down until golden.  Set aside
In same pan, add leeks, celery, and carrots and cook on med high heat until soft and starting to brown.  Add dried seasoning and garlic.  Stir to mix then add tomato paste.  Continue to cook tomato paste on medium heat for about 5 minutes stirring frequently.  Pour in beer and scrape bottom of the pan to loosen all the good stuff.  Put turkey back in pot (skin side up) and put the sweet potatoes and turnips on top.  Cover tightly and bake at 350 degees for 2 hours.
