A rare and delicate type of edible mushroom , truffles grow underground and look potato - like , round and irregular with either smooth or wrinkled skin. The taste is often compared to garlic , blended with an earthiness or pungent mushroomy flavor.
Recipe of truffles with meat
1 kg meat cubes 1 kg truffles , washed and peeled 1 litre water 50 g tomato paste 20 g pepper paste 30 g salt or to taste 15 g black pepper
Place meat cubes in a pot. Add salt, spices and enough water to cover the meat.
Bring to a boil over high heat. Remove scum every time it appears.
Add tomato and pepper paste and reduce heat to medium. Cover and keep cooling until the meat is tender.
Remove the meat cubes with a slotted spoon and keep aside in a covered container.
Get truffles into cubes and add add it to the meat stock ( take care while cooking because it becomes soft very quickly ).
Add meat cubes and adjust the salt. Serve hot with rice.
