Triple Chocolate Chunk Muffins

Desserts can be hard to find if you're looking for all natural ingredients.  Even when you do find one, chances are the taste doesn't give you quite that satisfaction you were looking for.  This recipe will blow you away.  I tasted them and felt like I needed to run a mile because they tasted SO GOOD!  I'm telling you, these muffins are the perfect mid-afternoon pick-me-up or the ultimate snack when you just have to have that chocolate!    

Triple Chocolate Chunk Muffins
Gluten-free

Ingredients

1 3/4 c. oats
3 egg whites
3/4 c. unsweetened cocoa
1/2 c. unsweetened applesauce
1 tsp. vanilla extract
1/2 c. plain low-fat yogurt (or Greek yogurt)
1 1/2 Tbsp. vinegar
1 1/2 tsp. baking powder
1 1/2 tsp. baking soad
1/4 tsp. salt
1 c. hot water
2/3 c. honey or agave nectar
1/2 c. dark chocolate chips (or peanut butter chips)

Method

Preheat oven to 350 degress.  Line muffin pans with foil cupcake liners.  Set aside.

Blend together all the ingredients except the chips.  Blend until oats are ground and mixture is smooth.  Place mixture in a bowl and gently stir in 1/4 c. of the chips.  Scoop mixture into prepared muffin pans.

Place muffins in oven for 10 minutes.  After 10 minutes, removed muffins from oven and distribute the remainder of the chips on top of each muffin.  Place back in the oven for 3-5 minutes, or until a toothpick comes out clean.  Cool muffins before removing from pan.
