Enjoy!I love serving this for Bar-b-q get-together’s or picnics in the summer because it’s a light dish that pairs very well with grilled food. This casserole is wonderful over a bed of lettuce or you can just have it on its own or as a side dish. |

Fresh vegetables are popping up everywhere and I have been getting my hands on the fresh farmers markets to whip up quick and easy recipes that put me in the springtime mood. The farmer’s markets veggies are not only super fresh, but very healthy for me.
My tomato and onion casserole is a perfect example. I love layering different ingredients with a few spices and calling it a meal. When Paul is away I make a lot of dishes this way because I get to load on all of my greens and veggies and shy away from the heavy carbs, sugars and meats. We both are healthy eaters but a 6’5” man needs a little more meat on his plate than just a fruit and veggie casserole… no matter how delicious it is.
Tomato and Onion Casserole

Ingredients
3 large tomatoes
1 large red onion
2 tbsp olive oil
1 tsp garlic powder
course salt and pepper
Preheat oven to 450 degrees.
In a glass baking dish arrange tomatoes and onions in rows overlapping each other. Brush the olive oil over the tomatoes and onions so that all the tops of the vegetables are covered. Drizzle the remaining oil as to cover and get in all the cracks. Season with garlic powder, salt and pepper.
