This is a recipe I asked a friend of mine, she had invited us for tea and this cake was great!

Carrot cake
250 gr grated carrots 200gr sugar 100gr butter 150 gr chopped walnuts 250gr plain flour 1 pkt, baking powder teaspoon mixed spice Pinch of salt
Beat butter and sugar, until light and fluffy Add eggs and pinch of salt and beat well Add flour and baking powder,carrots,nuts,and mixed spice and mix thoroughly Pour mixture into loaf shaped cake tin and bake at 190C for 45 mins
