The Greatest Wrap of All

I have been singing “the greatest wrap of all” to the tune of Whitney Houston’s “The Greatest Love of All.” All. Day. Long. Well, at least since I made my new favorite wrap. It’ll be yours, too, once I show you how easy and healthy it is. But first: this week’s CSA!

As excited as I get every time I pick up a new box, I also get sad that I can’t have one weekly through the entire year. When I have the CSA during the Spring and Fall seasons, those 24 weeks are the easiest for grocery shopping. Not to mention they’re the most exciting because I’m constantly experimenting with veggies I may not normally pick out at the grocery store.

Think about something with me for a sec. When you go out to eat, there’s always something you never order because you figure you can easily make it at home. And then there’s something you always order because you can never make it as well yourself. For me, those two things are chicken dishes and wraps, respectively. I’ve had so many different wraps in my day, but rarely ever do I make them at home. And by rarely, I mean never. Today things changed for the better with this little ol’ wrap and these healthy ingredients.

Ingredients

  • 1 tortilla/wrap of your choice (I used an  Engine 2  sprouted ancient grains tortilla)
  • 1/2 cucumber, sliced and quartered
  • 1 oz. plain hummus (I used homemade)
  • 1 oz. roasted red peppers (I used Trader Joe’s sweet & hot cherry peppers)
  • 1/2 oz. light feta cheese
  • 2 tbsp. olive tapenade (or just chopped olives)
  • 1 tbsp. capers
  • squeeze of lemon juice

The Engine 2 tortillas are a new product line at Whole Foods. The cucumbers were from my CSA and the hummus was from a batch I made, but the rest of the ingredients were all Trader Joe’s goodies! Gosh, I love that place.

What’s something you never order at a restaurant because you prefer to make it at home? And what’s something you never make at home because a restaurant always seems to do it better?
