The First March Weekend!!…

Hi there!  Happy Monday to you!  I always feel like the weekend flies by so quickly.  This one was no exception.  It literally flew by so fast.  I hope this week flies by as quick as the weekend did.  I didn’t even get a chance to catch up on my sleep.  So I feel like a walking zombie now.  There is no sleep in my house.  It’s all because of the lovely people who live above us that like to party like they are living in a frat house and stomp their feet all day/night.  It’s really obnoxious already.  I cannot wait for when we get to move which will hopefully be by this summer!  I can’t stand having people above us.  I want to live in peace and quiet for once!  Anyway, what did you do this weekend? 

On Friday, Mike and I decided to go to the Salt Creek Grille for dinner.  I received a coupon for my birthday and we wanted to celebrate the fact that Mike got a new job!  Yay!!!  He is starting next week and he is really looking forward to it.  I’m happy for him.  For dinner, I decided to eat whatever I felt like and not care about my stomach for once.  That was a bad idea in the end but at least I got to eat a few things that I haven’t had in a while.  We split a Caesar over mesquite salad.

I think the last time I had a Caesar salad was over a year ago.  I don’t eat too much salad because it destroys my stomach.  The Salt Creek Grille has this amazing caesar salad.  They grill the lettuce.  It’s wonderful.  They actually split our salad on two plates and this one was mine.  It was massive.  I had Mike finish the rest of mine.  I didn’t want to destroy my stomach too much.

For my dinner,  I decided to order a Portobello mushroom burger.  I took a lot of the items on the actual burger off.  I didn’t realize it came with tomatoes and lettuce on it.

We both loved our meals.  We hadn’t been to the Salt Creek Grille since Valentine’s Day last year.  It’s kind of pricy but since I had a coupon, it made for a more reasonable dinner.  We had something to celebrate so it was worth going out to eat one night on the weekend.

Friday night, I think I probably slept for all of 5 minutes the entire night.  I was out of bed by 6am.  It was awful.  I wanted to sleep but the lovely people upstairs were not having that.  I spent much of the morning watching tv, having breakfast, organizing my magazines and the house.  I was quite productive but I was in a pretty miserable and tired mood all day.  Mike and I left the house to run a few errands and then came right back.  I tried to take a nap but that wasn’t happening either.  Damn creaking floors!  Mike graciously offered to cook dinner.  He made us coconut crusted chicken!

Dinner was fantastic!  He really did a good job.  He made the coconut crusted chicken the same way that he made the tilapia version.  I love how the coconut tastes on the chicken.  It gives it so much flavor and it doesn’t take long to make either.  It was great.   We spent the rest of the night catching up on the show Monday Mornings.  Do you watch that show?  It’s a hospital based show but it’s much different from Grey’s Anatomy.  I really like the show and I’m glad that we started watching it.

On Sunday, Mike and I went to the supermarket and stocked up on items that we needed for the week.  Then we baked my favorite Fresh Apple cake to bring to my in-law’s house since they were having us for dinner.

Since I was already baking, I decided to make Mike and I, two-ingredient cookies that I have seen on Pinterest !  They are really easy to make!  All you need is 2 ripe bananas, 1 cup of oats and whatever mix-in’s you want. You mix the bananas and oats together and bake in a 350 degree oven for about 12-15 minutes!  That’s it!

The cookies tasted like banana bread!!  I added chocolate chips to a few for Mike.  I really enjoyed them!  They are tasty and very quick to make.  They also don’t contain any added ingredients, just bananas and oats!  Yum!

Dinner at my in-law’s house was very good.  My mother-in-law had seen an Ina Garten recipe for potatoes on tv and my father-in-law made them as a side dish.  They were so good that I just printed out the recipe and I’m planning on making them sometime this week to go along with dinner.  I will definitely post the recipe on the day that I make them.  They were really good.
