Good Morning! Happy Monday! I hope all of you had a great weekend! What did you do this weekend? Did you watch the Super Bowl? I watched the Super Bowl. I thought Kelly Clarkson did such an amazing job with the National Anthem! Her voice is just incredible. She will always be my favorite American Idol winner besides Carrie Underwood. I didn’t think the half-time show was that horrible. It was a lot better than last year’s, Tom Petty. I couldn’t even sit through that. I liked that I knew the songs and the 80′s little girl in me came out hearing old Madonna songs. The commercials were okay. There were a few that I liked.
My weekend wasn’t that exciting. I didn’t feel good the entire weekend. My stomach was definitely not agreeing with me at all. I’m getting more and more frustrated as days go by. On Friday, it was a week that I have been taking the medication for Crohn’s since I was first diagnosed . I thought I would have felt some relief by now but no such case. I don’t know if it’s because I’m trying to figure out what foods to eat and not eat and that is counteracting the medication. I’m not sure. I think I’m going to finally call my doctor today and the nutritional counselor to see if I can get earlier appointments with both of them. I cannot live like this.
Friday night, when Mike got home from work, we stopped at BJ’s to get a membership. We were using a free 3-month trial and that expired. So we finally caved and got a membership there. I really enjoy going there. I get really good deals on my allergy medication and vitamins. Plus, they have good deals on plenty of other things and I like that you can use multiple coupons. I’m happy to have a membership for a year. We will get good use out of it. I didn’t have anything exciting for dinner and didn’t bother to take pictures of it. All I know is that I felt absolutely terrible and went to sleep around 9 or 9:30pm. Party pooper.
On Saturday morning, I woke up and decided that I wanted coffee really badly. Well that was a massive mistake. I felt really sick the rest of the day from it. You don’t realize how much you miss drinking coffee until it doesn’t agree with you anymore. Don’t get me wrong I enjoy drinking tea but I am much more a coffee drinker. Know of any coffees that are gentle on the stomach and caffiene-free? I managed to pull myself together in time to get blood work taken. Luckily, the woman didn’t hurt me too bad. So I’m glad about that.
I came home and Melissa and I researched deals together online and she told me about coupons to print and I decided to go to Whole Foods with Mike to try some out. My total before the deals and coupons was $21 and I brought it down to $10! Not bad if you ask me. I had a bag full of stuff! One of my favorite purchases was this product right here:
Vegan, dairy-free Chive and Onion Cream Cheese
I have seen this brand of cream cheese in the store selling for $3-$4. I don’t know about you but I don’t have that kind of money to spend on just cream cheese. So I saw it sitting on the shelf at Whole Foods for $2.99 and then I noticed a coupon on the lid that said $1.00 off! So I ended up getting this cream cheese for $1.99! Not bad! I tried it on Sunday morning and it was incredible! It actually didn’t bother my stomach. It was great to eat cream cheese without taking lactaid pills. I highly recommend this cream cheese if you are vegan, or if you are lactose intolerant like me. It’s delicious!
Once we came home, we decided that we would like to venture out to dinner. So we decided on a restaurant that has a gluten-free menu. Now, I’m not gluten-free but I’ve been doing a ton of research with Crohn’s and it says to stay away from whole grains. So I was thinking maybe if I got something light from that menu I would be alright. Well, that was not the case! I ended up getting grilled chicken with mushrooms, and artichokes in a white wine sauce with a baked potato. They didn’t tell me it came with a salad and they brought out a pathetic looking salad. I’ve been trying to stay away from salads as much as I like them cause they are making me sick. So I picked at it, and then I started eating my dinner.
Just as we were about to leave, it hit me. I felt awful. My friend/bridesmaid, Courtney wanted to come over our house after dinner with her husband. I felt really bad that I had to cancel on them. I just felt really sick and terrible. I wouldn’t have been much company to be around. Mike and I ended up going to sleep early Saturday night as well.
I forgot to mention on Saturday I received a letter in the mail from my gastrointestinal doctor with the results of the biopsies she took during my colonsocpoy. She said that they confirm the fact that I do have Crohn’s Disease. So at least I know for a fact now that it’s true.
On Sunday, I went food shopping with Melissa and my mom. I ended up getting some really great deals, thanks to Melissa! She ended up getting even better ones. I’m still trying to convince her to do a guest post on here about bargain shopping and couponing. I hope she agrees soon!
For dinner, I had plans to make a recipe that I created myself for a whole chicken in the crockpot. Since the last rotisserre chicken I bought, ended up being raw inside, it completely turned me off. I decided to try my hand at making my own whole chicken in the crockpot. I’ve done it in the oven before but I wanted that tender chicken that you get from rotisserre chicken. Trust me, you are going to want to make this recipe!
Easy Chicken in the Crockpot
Ingredients:
1 whole chicken
Garlic Powder
Onion Powder
Poultry Seasoning
Directions:
Remove the bag of giblets from the chicken and rinse the chicken clean with water. Pat it dry with a paper towel. Protect your crockpot with a crockpot liner (optional). Place the entire chicken inside of your crockpot. There is no need to add liquid because the chicken is going to create beautiful stock for you to use!
Now season the chicken with your choice of seasonings. I used even parts of Garlic Powder, Onion Powder and Poultry seasoning. Make sure the entire chicken is coated in your choice of seasonings.
Cook on Low for 8 hours. Enjoy!

This was the most delicious chicken I have ever cooked. It was so tender and moist. It had a ton of flavor too! I really liked it and so did Mike. From now on I will be making my own whole chicken. It was a lot cheaper than buying a rotisserre chicken too. The only thing that bothered me were the vegetables. My stomach was not a happy camper.
