Monkey Boy and Big Bad Dad went to Miller Farm with MB's preschool class. I had BBD go this year since I knew he could carry more veggies than I could. It was quite a bounty they brought home.The size of the veggies was amazing, onions as big as Boo Girl's head, carrots as big as Monkey Boy's arm. That big, lumpy purplish thing in the middle of the picture next to the onions is a turnip! I've never seen one that big.
I had so much produce that I made two soups that day, a French potage on the stovetop and an onion soup in the crockpot. A potage is basically onions and potatoes cooked in chicken broth. Other veggies are optional. I used garlic, green beans, turnips and carrots and a sliver of ginger I had left over in the fridge. You chop up the vegetables into small pieces, cover with broth, and bring the whole thing to a boil. Then you lower the heat, cover and simmer until the veggies are soft. Afterwards, you puree the soup in a blender or food processor (I used my Cuisinart). Serve and add salt and pepper to taste. It was yummy and you felt healthy eating it. Even the kids loved it.
Monkey Boy didn't care for the onion soup even with the melted Swiss cheese on top. The soup was very tasty but the crockpot didn't cook the onions enough as they were still crunchy. Next time I make onion soup I will sautee the onions in butter until they're soft, then add them to the beef broth and seasonings and let them cook in the crockpot for 6-8 hours.
