The Barefoot Contessa’s Mustard-Roasted Potatoes!!…

Hi there!  Happy Wednesday to you!  We are half-way through this week!  Sadly, there is no snow right now and I will not be getting my snowstorm that I have been wishing for.  I believe by the end of this evening we are supposed to have 3-5 inches of snow.  I’m sad!  I wanted at least one snowstorm this winter.  We haven’t had one in such a long time.  I’m still hoping that maybe the track will move an unexpected way and we will end up getting much more snow than anticipated.  One can dream, right?  ;)   I’ll still keep my fingers crossed.  We are supposed to be getting our taxes done after I’m done work today.  I’m looking forward to that as long as we don’t owe anything.  We will be filing jointly since we are married now.  I’m not sure what to expect with that but it should be interesting!

Mike had started on dinner as I was walking through the door since he is done with work for this week.  He starts his new job next week.  It’s nice that he gets a few days to relax before he starts a new job.  He started on the side-dish first because that was going to take the longest.  We decided that we wanted to try making the side-dish that my father-in-law made with dinner on Sunday when we were over.  My mother-in-law found the recipe while watching the Food Network and then he decided to make it as a side-dish.  Mike and I liked it so much that we wanted to try making it at home ourselves.  I couldn’t wait to see how these would turn out!  Mike made our entire dinner himself so that I was able to do some things that I needed to get done on the computer.  I was so thankful that I didn’t have to make anything last night.  Sometimes it’s nice to get a break and be cooked for.

Mike made us turkey burgers which he made exactly how we made the Cheeseburger Quesadillas last week.  He seasoned the ground turkey with salt, pepper, ketchup and mustard and then grilled them on our grill pan on the stove.  He also roasted some vegetables in addition to the potato side-dish, which you REALLY need to make!  It’s incredible!

Mustard-Roasted Potatoes from the Barefoot Contessa

Ingredients:

2 1/2 pounds small Yukon Gold potatoes
2 yellow onions
3 tablespoons olive oil
2 tablespoons whole-grain mustard
Kosher salt
1 teaspoon freshly ground black pepper
1/4 cup chopped fresh flat-leaf parsley

Directions:

Preheat the oven to 425 degrees.

Cut the potatoes in halves or quarters, depending on their size, and place them on a sheet pan.  Remove the ends of the onions, peel them, and cut them in half.  Slice them crosswise in 1/4-inch-thick slices to make half-rounds.  Toss the onions and potatoes together on the sheet pan.  Add the olive oil, mustard, 2 teaspoons salt, and the pepper and toss them together.  Bake for 50 minutes to 1 hour, until the potatoes are lightly browned on the outside and tender on the inside.  Toss the potatoes from time to time with a metal spatula so they brown evenly.

Serve hot sprinkled with chopped parsley and a little extra salt.

These potatoes are seriously the best potatoes I think I’ve ever had!  They come out perfectly roasted.  They are slightly crispy and brown on the outside and nice and soft on the inside.  The mustard blends well with the onions and the parsley.  It’s a fresh tasting dish and really tastes like something you would get at a restaurant.  I think it’s an impressive side-dish to serve when you are having guests!  It’s not too difficult to make either.

Our dinner really was fantastic last night!  My stomach didn’t agree but I did.  Sometimes I have to allow myself to eat things that I really want to eat and just deal with the consequences later.  Sometimes it’s worth it.  Seriously, though, these potatoes are unreal!  You will not be disappointed if you make them!

Which Chef is your favorite to make recipes from?  Do you have a favorite recipe that you always make from a particular Chef?

I have made several Rachael Ray recipes and they always turn out great!  I have also made an Ellie Krieger recipe that turned out well.  This was our first time making an Ina Garten recipe.  I have made Sandra Lee recipes in the past as well.  I still have a ton of other Chef’s that I would like to try a hand at making their recipes.  I have so many cookbooks and I would like to go through and make at least one recipe from all of them.  I think that would be fun and challenging.
